Few dishes capture the essence of autumn as perfectly as pumpkin risotto. Creamy, full of flavor, and with the signature gentle sweetness of pumpkin, it’s Italian comfort food at its finest. At Keizer Culinair, you can learn during our cooking workshops how to make this risotto the Italian way: with patience, attention, and a love for flavor.

What makes pumpkin risotto so special?

A good risotto is all about balance. The rice should be creamy but not mushy, and the flavors should blend beautifully. Adding pumpkin makes this classic dish even more special: it brings color, depth, and a subtle sweetness that pairs perfectly with savory Parmesan cheese.

Pumpkin risotto is perfect as a main course, but it also works well as a starter for an Italian dinner. The best part? You don’t need any complicated techniques—just a little attention and love for cooking.

    1. Prepare the pumpkin
Peel the pumpkin and cut it into cubes of about 3 cm (1¼ inches). Finely chop the shallots.
    2. The Base
Heat some olive oil in a pan and sauté the shallots until translucent. Add the pumpkin and cook for 7–8 minutes until tender.
    3. Add the Rice
Remove the pumpkin from the pan. Add a little extra oil and stir in the risotto rice. Cook, stirring, until the grains are glossy and slightly translucent.
    4. Deglazing with Wine
Add the white wine and let it gently reduce while stirring continuously. Season with salt and pepper to taste.
    5. Adding Broth
Gradually add the warm broth, a little at a time. Wait until the rice has absorbed the liquid before adding more.
    6. Return the Pumpkin to the Pan
About halfway through cooking, add the pumpkin back to the pan. Continue cooking until the risotto is creamy and the rice still has a slight bite.
    7. Finishing and Serving
Stir the butter and half of the Parmesan cheese into the risotto. Serve with the remaining cheese and fresh parsley.
