Pasta has a unique way of providing maximum enjoyment with minimal effort. This simple aglio e olio stands out for its modesty, and for that very reason it becomes a culinary highlight. Worth a try! Chances are you already have almost all the ingredients in your kitchen as standard.


  • 500 gr spaghetti
  • 6 cloves of garlic thinly sliced
  • 120 ml good olive oil
  • 1 tsp chili flakes
  • 3 sprigs fresh parsley finely chopped
  • Freshly ground black pepper
  • Salt
  • Parmesan cheese grated to taste


  • Bring a large pan of water to a boil with salt. Cook the spaghetti, stirring occasionally to make sure the strands of pasta stay loose.
  • Depending on your pasta type, this will take 10-12 minutes. Make sure the pasta is al dente.
  • While the pasta is cooking slowly roast the garlic in the olive oil over medium-high heat.
  • This will take about ten minutes if you want to do it right. Put the garlic and oil in a cold pan and put it on the heat. Turn it down once the olive oil starts to bubble a little. Cook until the garlic has turned golden brown. Remove from heat
  • If using chili flakes stir it directly into the paste.
  • If using fresh chili pepper, make sure it is sliced paper-thin and stir it into the pasta.
  • Pour the olive oil and garlic onto the pasta, add the parsley and half the grated cheese and stir to combine.
  • Serve the pasta with the rest of the parmesan cheese.
